Muffin Pancakes

Back during Hurricane Isaac, TGF made pancakes out of some lemon poppy seed muffin mix. They were delicious. We have been meaning to make them again, however we haven’t been able to find that muffin mix! So, we decided to just try out blueberry muffin mix this time.

Ingredients:

  • Martha White Muffin Mix (any flavor I’m sure will be fine)
  • Milk (just what the mix bag says you need for the muffins)
  • Some butter or PAM for the skillet you’ll be cooking these bad boys on
  • Whatever topping you desire. We used Cool Whip. You could do syrup, powdered sugar or just eat them straight out of the pan.

Make your easy batter.

Pour your muffin pancakes in the pan and fry ’em up!
