Cuban Black Beans & Rice with Turkey Sausage

Sorry this is so late today. I didn’t get around to working on it last night. My friend Crystal taught me this recipe when she was still married to my brother, and it is super easy–perfect for Lazy Cooking!

Ingredients:

  • One bag of Vigo Cuban Black Beans and Rice
  • Turkey Sausage (I usually only use one “link”)

 

Prepare the beans and rice according to the package.

 

 

While it's cooking, cut up the sausage into bite size pieces.

 

 

When the beans and rice are done, stir in the sausage. Then serve and eat!

 

When I have the desire to do so, I sometimes make corn muffins to go with this dish.

WARNING: This will make a shit ton of food, and if you are a single person like me, you will get pretty sick of eating it for every meal for a week. I haven’t tried freezing it, so I don’t know how well it holds up.

Why do I feel this way?

First thing’s first, last week I kinda dropped the ball. We had a convention to go to at work, so we had to get everything done earlier and then go to the seminars and parties. That didn’t leave me much time to focus on the blog. Sorry. Hopefully, I will do better this week now that my schedule is a bit more normal.

Ok, now that is out of the way, on to some random things that seem to be plaguing my brain. I feel like some friends of mine are keeping secrets from me. If my suspicions are true, these secrets have absolutely nothing to do with me personally, so therefore it’s their business if they want to keep things quiet. However, I guess I just feel, I don’t know, “unhappy” maybe about the whole probably not even there thing because that means they don’t want me to be included in their lives or something. I can’t work this one out. Why is this bugging me so much? It’s not that I suspect them of secretly not liking me or not wanting to hang out with me or anything with me. I am suspecting that it’s secrets about their own lives intertwined but because they are both my friends, I guess it is like I am feeling left out since they aren’t even letting me know it’s happening? It’s making me a ball of confused mess and I don’t like it.

I would just ask, but then I don’t want to seem nosey or if I am totally wrong I don’t want to freak them out into thinking they are giving off this impression. However, in my experience, I’m usually pretty good at picking up these things and my suspicions on such have always come out to be true. I don’t know. These aren’t friends that I feel like I’m on that level with though.

Maybe my life is just so boring that I’m making up drama and intrigue. I don’t know. So here is a confusing Misc. Monday post for you. Hope you all had a great weekend and will have a good week ahead of you.

The Poor/Lazy Man’s Dinner

You may have noticed that on Sunday there was no Makin’ Groceries post. It’s rained ALL weekend long. Come Sunday, I had no desire to get out in that mess even if I didn’t have anything to eat in the apartment. However, Tom had no more wet food; and while I will make do with bread and peanut butter till it’s all gone, I cannot subject my cat to a “making do” lifestyle. So I pulled on my rain boots and drove to the store. I got the fixins for this week’s Lazy Cooking post and Tom’s food; however, when I got to the checkout line, I realized I left my wallet at home. I then, begrudgingly, put everything back; drove home and grabbed my wallet; and then drove to the drug store just around the corner from me and grabbed some cat food and something to eat for myself.

Since then I’ve been busy after work, unable to go to the store. So here’s what how I’ve been managing my dinners (forgive the blurry pix; I was drunk when I took them):

Dump in cheese powder (that is probably more powder than cheese).

I was too hungry to care to take a pic of the final product. It was good though!

Yeah, I’m also kinda broke these days so that added to the lack of a real recipe this week. Better luck next week!

Food Waste Friday

Almost forgot to post this today! That’s because it was another no waste week for me! Next week I won’t be so lucky. I can see some lettuce in my fridge that is just not gonna get used up in time probably; not to mention all that damn tzatziki sauce I made for the gyros. I’m not particularly fond of the sauce myself, unless I am eating gyros. Can I freeze it? It’s yogurt based, can I freeze yogurt?

Anyway, hope everyone else was waste free this week!

Sew Buttons

Ok, I guess I’m finking out of this week’s Pretending to Craft post, but crafts don’t have be just painting styrofoam cups to make them look like hats and felting wool, right?
This week, I took this little section to get some happy home-making out of the way. Mending!

Torn jam jams

Here are some pajama pants that have a rip in the leg. Being pjs I haven't really cared about the rip but it was just getting bigger and bigger and bigger...

I swear I don't own a lot of pink clothes.

This is a top that I got at Goodwill. It seemed to be in pretty good shape when I bought it; then I got it home and saw that it was missing a button on one of the sleeves. At first I was like, "meh who needs those buttons?" Then I put it on again and realized that I kinda do need those buttons.

 

Ok, I also wear more than clothes in the red family in general.

Another Goodwill buy. It really seemed perfect when I bought. I put it on at home and noticed a tiny cut in the shoulder of the dress. I've been wearing it anyway, just with a sweater.

So while watching Gilmore Girls I pulled out my sewing kit (at least that is what I call it) and got this sewing out of the way.
